Spreading myself thin this weekend.

I was so impressed with V-Con's Walnut-Mushroom Pate that I thought I'd give a bunch of the other V-Con's dips and spreads a try. I've got three worthy spreads on the go here: Creamy Kalamata Spread, Curried Carrot Dip and Mediterranean-Style Cashew-Cucumber Dip. All of them are excellent. The Kalamata is a strong flavour, but someone mellowed by the tofu. The Curred Carrot is incredibly simple to make, and carries a very subtle and sweet curry taste. I had my doubts about a carrot dip, but it's surprisingly good. And the Mediterranean dip is reminiscent of tzatziki, but with a magical creaminess created from pureed cucumber and cashews rather than yogurt. What I appreciate most from these recipes is that they are creative and flavourful without only relying on the usual vegan dip staples: tofu or pureed beans - ingredients even I can get a little tired of!There were lots of new recipes to try this weekend. Above are the Jalapeño Corn Cakes from Yellow Rose Recipes. The texture created by the silken tofu and cornmeal was very nice, and didn't taste 'tofu-ish' at all. I halved the jalapeños for fear of too much heat, but it wasn't necessary. I can imagine that I'll want to complicate this recipe next time with the addition of cilantro or roasted red peppers, but it really isn't necessary as it's lovely on its own.I was really happy with this Indian potato pancake I created as a side for Sunday Night Dinner. I essentially made a giant hashbrown, but flavoured it with toasted cumin seeds, turmeric, chillies and salt. I cooked it in a frying pan on medium heat for about 10-minutes per side and it came out nice and crispy. They key to the crispiness factor is to ring the water out of the shredded potatoes before frying. Below you can see the Indian pancakes served with TVP meatloaf (Cozy Inside cookbook), peas and corn.

Corncakes and potato pancakes, oh my! They look delicious—nice and crunchy. I've yet to buy a copy of v-con (I know, I'm soooo behind the times), but it's at the top of my list.

It's nice to know that V-Con is a good cookbook. I am looking to start a vegan cookbook collection and didn't know where to begin, but I think I might start with V-Con and Vegan with a Vengeance.

Do you have any other suggestions?

wow, the Creamy Kalamata Spread, Curried Carrot Dip and the Mediterranean-Style Cashew-Cucumber Dip sound great, as do the corn cakes!! I love Veganomicon, but don't have Yellow Rose Recipes yet - nice to see food showcased from BOTH of the books, all in one post!! :0)

yeah, the walnut pate is looking at me, too! best presentation ever! And I love that you tried all three at once for uber-nomicon taste-fun. I'm not sure what keeps me from making the carrot dip, since I *always* at least have carrots around, but I'm definitely inspired to do it, now!

The potato pancake looks sooooo good right about now. Everything does, really. I guess that's what being hungry and looking at awesome foodie blogs will do to ya, eh?

I had no idea such a thing as carrot dip even existed. Now that I have V-con, I'll definitely have to check it out. Sounds interesting...

I love your new look! I haven't gotten my hands on V-con yet but I sooo want to order it. With my Christmas credit bills coming in, it's hard to justify buying another cookbook right now. I'm sure once I make my payments, that little voice in my head will come up with some excuse that justifies me pulling that MasterCard out.
When I was a meat eater, I loved pate. I've tried a couple of store-bought vegetarian ones that were crap. Since Isa's recipes have not disappointed me yet, I'd be willing to give this one a try. And your Indian potato dish sounds amazing!!

This does look tasty. I find as I cook more and more that not fearing new spices leads to a new world of eating. I started using spices such as tumeric, and cumin, among others which add a nice flavor to the food. I am a new vegan and also started a blog to help others become vegan as I am. I love to cook and write and someone suggested blogging to me. Becoming vegan has been a wonderful experience.
