Cups, Cups and More Cups!

I was in charge of Sunday Dinner's dessert and Ewa tasked me with a mission. She had a carton of silken tofu one day away from expiring that I had to incorporate into the dessert. I find I 'hit and miss' a lot with tofu-based deserts, so I decided peanut butter cups were the only sure-thing. As you'll see from the next picture, my mission almost ended in disaster!
I started with chocolate oatmeal cookies, which I blind-baked in muffin tins to make them the shape of cups. I really should have left them to cool for a while before I tried to dump the black beans out (I put the dried black beans in the cookie shells to prevent them from puffing-up while baking....aka blind -baking). Instead of loosing only the beans, I lost the tops of all cups!

It wasn't the end of the world. I was left with enough cups to fill with a mixture of peanut butter, tofu and maple syrup. And, the scrap cookies made a nice decoration on top! They were absolutely fantastic. It was my first time making that cookie recipe and they were good enough to put a big note in the cookbook saying "FANTASTIC, make these again", written in ink (meaning I really mean it).
For reasons unexplained, I couldn't get enough of cookie cups this weekend. Here I made mini-ginger cookie cups (cookie recipe from VWaV) and filled them with a pumpkin, tofu, maple syrup, cinnamon, clove and nutmeg mixture. I think it was the lousy weather that had me craving autumn flavours.
