Nothing overly impressive today. I'm too tired...is it Friday yet? We had these mushroom filled wontons and dumplings, baked in the oven. And, then some....
...pasta with lemon, roasted garlic and cannellini beans. The three combined together to form a nice creamy sauce (with some added almond milk), a fortunate accident! The whole dish was screaming for arugula, and I have none. Next week I suspect I will overload on arugula since I've craved it so much this week. I blame Ewa, she's had it in her lunch for the last few days and I've been extremely jealous.

Well I, for one, am overly impressed.
Yayy I love all of your updates. I know this is a few entries back, but what do you use to wrap the spring rolls? I want to make something like that but know NOTHING about them.
And about the chips, I tried to make some last week but I also tried to make my own tortillas for them so all in all it didn't really work out haha.

Tania - When you deep fry spring rolls, you use spring roll wrapers, usually found in the freezer section of the grocery store. But when you make fresh spring rolls, you make them from rice paper (sometimes called spring roll wrappers as well)..here's a photo: http://www.templeofthai.com/images/products/3540000167.jpg
They come about 30 to a package. You take them one-by-one and soak them in hot water for about 15-30 seconds, then wrap whatever the heck you want in them. Yum!

Those look like the same wonton wrappers I have used! They are hard to fill because you can only fit like 1 tsp. of filling in it. I love them baked.
